PopStroke is seeking a talented Sushi Sous Chef for our highly anticipated Palm Beach location, opening this December. This is a rare opportunity to be part of something extraordinary. Don’t miss your chance to elevate your culinary career with us!
The Sushi Sous Chef will assist the Sushi Chef with managing the daily operations of the sushi kitchen and will be tasked with producing the highest quality product for our guests on a consistent basis.
The ideal candidate will have a passion for creating exquisite sushi dishes and delivering exceptional culinary experiences to our guests.
Starting at $25/hr
What you’ll do
- Adhere to company standards and service levels to maintain the highest quality of product and service, increase sales and minimize costs.
- Manage food preparation and cooking tasks efficiently, from retrieving items to cooking and final presentation.
- Carve and trim meats and fish for various services, ensuring each dish meets our standards.
- Prepare rice, sushi rolls, sashimi, and other Japanese dishes with precision and attention to detail.
- Ensure freshness and quality of ingredients used in sushi preparation.
- Ensure proper food temperatures are maintained. Maintain rigorous food safety and sanitation standards to ensure the safety of our guests and compliance with health regulations.
- Maintain a clean and organized workstation, including proper storage and handling of sushi ingredients and utensils.
- Collaborate with kitchen and restaurant staff to ensure timely delivery of orders.
- Perform opening, closing, and side work duties, and other duties in accordance with company checklists and procedures.
- Assist with inventory management, including monitoring stock levels of sushi ingredients.
- Adhere to portion control guidelines to minimize waste and maintain cost efficiency.
- Stay updated on current trends and techniques in sushi preparation, and continuously strive to improve skills and knowledge.
- Immediately rectify and/or report any unsafe working conditions, accidents, operational needs, and equipment or aspects of the kitchen in need of repair.
- Assist the main restaurant operations as needed.
- Other duties as assigned.
Qualifications
- Minimum of 3 years of experience as a Sushi Sous Chef or similar role
- Excellent knife skills
- Proficiency in sushi preparation techniques (sushi rolls and nigiri), including meat trimming, rolling, cutting, and garnishing
- High familiarity with kitchen equipment and processes
- Knowledge of food safety regulations and best practices in a culinary setting
- Ability to work well in a fast-paced setting
- Must possess good communication skills and the ability to work collaboratively with diverse staff
- Strong attention to detail and creativity in sushi presentation
- Active Serve Safe Manager certificate
- A commitment to achieving company objectives in service, quality, sanitation, and cleanliness
- Self-discipline, initiative, leadership ability
- Pleasant, polite manner and a neat and clean appearance
- Evenings and weekends availability required, flexibility to work scheduled guest events
- Must be able to reach, bend, stoop, and frequently lift up to 40 pounds.
- Be able to work in a standing position for long periods of time
