    Job Overview:
    The Sushi Chef is responsible for preparing all sushi bar dishes, including sushi nigiri, rolls, sashimi, and other cold appetizers. This role involves proficiency in all sushi bar stations and preparation techniques, including creating both specialty and high-volume items, sauces, and garnishes. The Sushi Chef will ensure the quality and presentation of food meets Palm House standards while adhering to health and safety regulations. The position requires expertise in knife skills, cooking methods, ingredient organization, and sushi preparation, with a focus on providing exceptional dining experiences for guests.

    Key Responsibilities:

    Sushi Preparation & Presentation:

    • Prepare sushi, sashimi, rolls, and cold appetizers according to recipe standards and guest orders.
    • Slice fish and seafood to specified sizes and angles for optimal presentation.
    • Prepare sushi rice, measure and execute recipes precisely.
    • Create omakase menus and daily specials as requested.
    • Ensure that all sushi bar items are presented attractively and in line with departmental standards.
    • Work in front of guests as needed, particularly when preparing sushi or sashimi.

    Food Quality & Control:

    • Ensure all food is prepared using clean surfaces, tools, and in compliance with health and safety regulations.
    • Regularly assess and discard any spoiled food, and promptly notify management.
    • Follow the “First In, First Out” system to ensure fresh ingredients are used.
    • Maintain consistency in portion sizes and presentation.
    • Prepare specialty items, sauces, and stocks for restaurant service.
    • Ensure all items are stocked, fresh, and up to department standards, communicating low stock levels to the team.

    Kitchen & Workstation Organization:

    • Organize and maintain a clean and efficient sushi bar workstation, ensuring proper cleanliness and safety protocols.
    • Clean up workstation at the end of each shift and assist in kitchen organization.
    • Work closely with sushi chefs to maintain smooth operations in the kitchen.

    Health & Safety Compliance:

    • Ensure adherence to food safety and sanitation practices at all times.
    • Monitor kitchen equipment and utensils to ensure proper functioning and safe use.
    • Enforce safety protocols for the entire kitchen team to maintain a secure and sanitary environment.

    Operational Efficiency:

    • Assist in managing the sushi bar during peak service hours, ensuring quick and efficient preparation and delivery of food.
    • Address and resolve any kitchen-related issues promptly.
    • Collaborate with the Executive Sushi Chef, Sous Chef, and other team members to ensure smooth service.
    • Support in managing kitchen expenses and maintaining budgetary goals.

    Additional Responsibilities:

    • Provide assistance and relief across different sushi bar stations as needed.
    • Attend all relevant meetings, training, and team events.
    • Assist in receiving and organizing deliveries, ensuring all products are handled and stored correctly.

    Qualifications:

    • Education: Culinary degree or equivalent professional experience.
    • Experience: Minimum of 2 years of experience in a professional kitchen with at least 4 years in a sushi or related supervisory role.
    • Knowledge and Skills:
      • Expertise in seafood and fish preparation, with solid knife skills.
      • Strong understanding of food safety and sanitation practices.
      • Ability to manage a fast-paced kitchen environment while maintaining high standards of quality.
      • Creativity and passion for culinary arts, particularly sushi and Japanese cuisine.
      • Strong organizational and time management skills.
      • Ability to work well under pressure and multitask efficiently.

    Physical Requirements:

    • Ability to stand for extended periods of time.
    • Ability to lift approximately 40-50 pounds.
    • Ability to push or pull at least 100 pounds.
    • Ability to perform repetitive motions such as reaching, stooping, and crouching.
    • Dexterity to use tools and utensils effectively.
    • Ability to work in hot, humid environments with temperatures exceeding 100°F.
    • Ability to work flexible hours, including evenings, weekends, and holidays, based on business demands.

    Licenses or Certificates

    • Ability to obtain any government required licenses or certificates.

    Grooming

    • All employees must maintain a neat, clean and well-groomed appearance (Specific standards are available).
