SUSHI SOUS CHEF – SEASONAL
The Sushi Sous Chef assists the Shushi Chef in supervising all culinary operations for Moonlight Basin. The Sushi Sous Chef will lead the associates in their duties, menu creation, and promoting a safe work environment. As the Sushi Sous Chef, you will play a vital role in assisting the Chef in preparing and presenting high-quality sushi dishes that meet our restaurant’s standards. You will be responsible for ensuring the freshness of ingredients, maintaining cleanliness, and adhering to food safety regulations. This position requires a passion for Japanese cuisine, attention to detail, and the ability to work efficiently in a fast-paced environment. The ideal candidate will have prior experience in sushi preparation, strong knife skills, and a commitment to delivering exceptional dining experiences to our guests. In this role, you will collaborate closely with the kitchen team to create innovative sushi dishes while maintaining traditional techniques.

WHAT YOU WILL DO:
- Assist the Head Sushi Chef in preparing and presenting sushi dishes.
- Ensure the freshness and quality of all ingredients used in sushi preparation.
- Maintain a clean and organized workstation at all times.
- Adhere to food safety and hygiene standards in the kitchen.
- Train and mentor junior kitchen staff in sushi preparation techniques.
- Collaborate with the team to develop new sushi menu items.
- Monitor inventory levels and assist in ordering supplies as needed.
- Ensure timely preparation and delivery of dishes during service hours.
KEYS TO SUCCESS:
- Strong knowledge of Japanese cuisine and sushi preparation techniques.
- Excellent knife skills and attention to detail
- Culinary or apprenticeship program.
- Four (4) years of progressive experience in high-volume food production or catering in a supervisory or management role, or an equivalent combination of relevant education and/or experience.
- Ability to work effectively in a high energy and busy environment.
- Ability to make sound and rational decisions in performance of duties.
- Ability to work a flexible schedule: mornings, nights, holidays, and weekends when needed.
- GED or High School Diploma is preferred.
- Ability to collaborate cohesively with co-workers as part of a team.
