Position Summary

The Executive Sushi Chef is responsible for preparing and creating sushi dishes. They must have a thorough knowledge of sushi ingredients and preparation methods, as well as a keen eye for presentation. The Executive Sushi Chef specialize in creating sushi dishes and must be knowledgeable about the culinary techniques required for this specific food preparation. Their responsibilities include preparing traditional Japanese sushi rice, chopping, slicing, and filleting various kinds of fish, and customizing customers’ orders according to preferences and food allergy considerations. They also help attract customers and allow establishments to stand out among the competition in their areas. Sushi chefs are highly skilled culinary professionals specializing in the art of sushi-making, a traditional Japanese cuisine that has garnered global reverence.

This role pays an annual salary of $95,000 to $115,000.

Responsibilities

  • Prepare and present a variety of sushi dishes, including nigiri, sashimi, and rolls, using fresh ingredients.
  • Collaborate with the kitchen team to develop innovative menu items.
  • Maintain cleanliness and organization of the sushi station and kitchen area.
  • Ensure all food preparation meets health and safety regulations.
  • Monitor inventory levels of sushi ingredients and assist in ordering supplies as needed.
  • Train and mentor kitchen staff in sushi preparation techniques and food safety practices.
  • Provide exceptional customer service by engaging with guests about menu items and making recommendations.

Qualifications

  • Creative thinking skills to devise unique dishes.
  • Culinary degree from an accredited culinary school.
  • Minimum of 2-3 years kitchen management experience in a full service restaurant or events venue.
  • Extensive knowledge of traditional Japanese cuisine.
  • Ability to remain upright for the majority of working hours.
  • Knifework and plating skills to prepare aesthetically pleasing meals.
  • Strong verbal communication skills to give directions to assistants and interact positively with the rest of the team.
  • Teamwork skills to collaborate with kitchen helpers, waitstaff and other coworkers.
  • Computer skills to use inventory management and point-of-sale software.
  • Time management skills to ensure that prep work is complete before the start of service and orders are executed promptly.
