MoriMori, Chef Masaharu Morimoto’s latest temaki (hand roll) concept, is looking for an experienced
Kitchen Lead to join our team at Time Out Market Brooklyn. This position is ideal for a dynamic leader
who thrives in both a guest-facing role (cashiering, guest engagement) and a hands-on Japanese
kitchen environment.

About MoriMori & Chef Morimoto
MoriMori is a fresh, fast-casual temaki bar created by Chef Masaharu Morimoto. Known for his ability to
merge traditional Japanese techniques with modern flavors, Chef Morimoto has introduced his
signature approach to sushi through MoriMori.

Position Overview
As Kitchen Lead, you will be responsible for overseeing restaurantoperations, ensuring exceptional
service, and leading by example in both guest interaction and food preparation. This role requires strong
leadership, multitasking skills, and a passion for Japanese cuisine and hospitality.

Key Responsibilities

  • Train, lead, and coach restaurant team members to uphold MoriMori’s standards of service and
    hospitality.
  • Ensure compliance with all health, safety, and sanitation regulations.
  • Communicate effectively with staff and management to ensure smooth operations.
  • Manage service flow across dine-in, takeout, and delivery channels.
  • Open and/or close the restaurant, overseeing all aspects of service and operations.
  • Work harmoniously and professionally with co-workers and supervisors.

Position Requirements and Qualifications

  • 3 years minimum kitchen experience
  • Adequate knife skills
  • Experience handling raw seafood, Japanese products a plus
  • Sushi experience preferred but not required
  • If not already acquired, NYCDOH Food Handlers Permit must be obtained within 30 days of
    employment
  • Experience leading a team in a fast-paced restaurant environment.
  • Bilingual preferred.
  • Strong customer service skills with a positive, team-oriented attitude.
  • Ability to work under pressure while maintaining quality and efficiency.
  • Comfortable operating a point-of-sale (POS) system.
  • Ability to multitask and work efficiently.
  • Ability to motivate employees and work as a team.
  • Ability to lift and carry boxes weighing up to 50 pounds for distances of up to 50 feet and tomanipulate them from heights.
  • Maintain a professional, neat and well-groomed appearance, adhering to Morimoto Brandstandards
