Job Summary:
The Sushi Chef requires a passion for Japanese cuisine, a strong knowledge of sushi preparation techniques, and a commitment to delivering a world-class culinary experience. The role involves preparing sushi and other Japanese specialties with precision and creativity while maintaining the highest standards of quality, safety, and cleanliness. The ideal candidate will have prior experience in a high-end dining environment, exceptional knife skills, and an eye for presentation and flavor.
Key Responsibilities:
• Oversee the preparation and presentation of all sushi dishes to ensure quality and consistency
• Serve as a subject matter expert in traditional and contemporary sushi preparation techniques
• Manage inventory levels of sushi-grade fish and specialty ingredients
• Provide training and guidance to junior kitchen staff on sushi-related techniques and food safety
• Coordinate daily prep work and station setup with the kitchen team
• Maintain cleanliness and organization of the sushi station and adhere to all food safety regulations
• Develop seasonal and innovative sushi menu items in collaboration with the Executive Chef
• Collaborate with the culinary and front-of-house teams to ensure smooth service
• Address any guest concerns related to sushi preparation or dietary requests
• Ensure all dishes are prepared in a timely manner without compromising quality
• Train and participate in continuing education of kitchen staff on evolving sushi trends
• Perform other duties as assigned by management
Qualifications:
• Culinary degree preferred, with a focus on Japanese cuisine or equivalent experience
• Minimum 3 years as a sushi chef in a fine dining or upscale hospitality setting
• Advanced knife skills, knowledge of food safety protocols, ability to work efficiently under pressure
• High attention to detail, creativity, strong communication, team-oriented mindset
Physical Requirements:
• Must be able to stand for extended periods of time
• Ability to lift up to 40 lbs
• Comfortable working in a fast-paced, high-temperature kitchen environment
Pay Range and Compensation Package:
• $26.00-$28.00 per hour
