THE JOB:

As an Assistant Manager at Yellowtail Japanese Restaurant & Lounge, you will oversee the daily operations of our vibrant venue, ensuring everything runs smoothly and efficiently in an environment celebrated for its innovative fusion of traditional and contemporary Japanese cuisine with a touch of Korean essence. Your welcoming smile and exceptional service will set the stage for memorable guest experiences, as you take ownership of their needs and connect with them to create WOW memories that will linger long after their visit. In addition to managing staff and operations, you will embrace the artistry of our menu, which features seasonal fish and high-quality ingredients flown in daily from the finest markets, presented in stunning preparations-from fresh, off-the-knife seafood to 48-hour braised Wagyu beef. With panoramic views of the iconic Fountains of Bellagio surrounding you, your leadership will enhance hospitality and team performance, ensuring that each guest enjoys not only exquisite dishes but also an extensive selection of specialty sakes, beers, and whiskies from across Japan.

THE DAY-TO-DAY:

  • Make daily floor plans per shift to ensure proper rotation and coverage of stations
  • Supervise floor service in dining rooms during hours of operation
  • Perform employee evaluations and manage issues related to attendance records
  • Maintain communication with the Chef on all food service and menu issues
  • Communicate with management, chefs and culinary staff in order to fulfill and address issues or needs requested by guests and employees
  • Order supplies through the IP System and Purchasing; prepare purchase requisitions for any outlets from the warehouse or support departments
  • Keep inventory form and stocking area updated
  • Inspect food coming from support departments to assure freshness and quality
  • Maintain direct communication with guests for special requests and large party reservations

THE IDEAL CANDIDATE:

  • High School Diploma, GED or equivalent
  • 2+ Years of Prior Relevant Experience as a manager in a fine-dining restaurant
