GENERAL SUMMARY

The Sushi Chef & Cook position is primarily responsible for creating and curating a rich sushi menu in accordance with guidelines set forth by the Executive Chef. This position is in The Hideaway bar, providing an opportunity to serve as a line cook as well. This position will primarily work in a back-of-house capacity but will also have opportunities to work in front of members during special events. This position is also responsible for maintaining the cleanliness and sanitation of all prep and storage equipment on a regular basis.

PRIMARY JOB FUNCTIONS

  • Prepare all types of sushi, including maki, nigiri, and sashimi
  • Manage food prep activities
  • Coordinate with wait staff to ensure proper cooking, considering special requests and food allergies
  • Prepare appetizers, soups, and salads that are close to the philosophy of Japanese cuisine
  • Monitor food stock and place orders, as needed
  • Recommend new menu items
  • Maintain hygiene principles in all cooking areas and cleaning work areas at the end of each shift
  • Strictly adhere to rules and regulations established in the employee handbook and Club policies
  • Maintain open communication with all team members
  • Focus on guest-centric service with positive interactions
  • Recognize and address any problems resulting from member or guest complaints
  • Notify management of unsafe conditions, maintenance issues, or damage to equipment
  • Perform other duties as assigned and/or requested by Management

SKILLS & KNOWLEDGE

  • Policies and Regulations – Knowledge of company polices, federal, state, and local laws, government regulations and agency rules that pertain to properties managed.
  • Problem Anticipation/ Deductive Reasoning – Ability to tell when something is wrong or is likely to go wrong and then apply general rules to specific problems to produce answers that make sense. Uses logic and reasoning to identify the strengths and weaknesses of alternative solutions, conclusions or approaches to problems and considers the relative costs and benefits of potential actions to choose the most appropriate one.
  • Written Comprehension and Expression – Ability to read, understand and communicate information and ideas in writing so others will understand.
  • Oral Comprehension and Expression -Ability to understand and communicate so others can understand ideas and information.
  • Computer – Ability to develop and maintain computer records in Word, Excel and other software required by TBCC and regulatory agencies.

EXPERIENCE

  • 3 to 5 years of experience as a sushi chef, preferably in upscale dining establishments.
  • Experience working in a bar, casual, and fast casual restaurants.
  • Demonstrated ability to work with accuracy in a fast-paced environment
  • Strong attention to detail and ability to multi-task
  • Demonstrated ability to work with management staff and other employees in a professional manner
  • Demonstrated ability to work a variety of schedules including days, weekends, and holidays

EDUCATION

  • High school diploma or equivalent.
  • Must be 18 years of age or older.

  • The employee is usually outdoors and experiences a moderate noise level.

  • It is sometimes necessary to deal with unpleasant or angry people with the need to problem solve difficult situations.
  • It is necessary to adapt to a frequently changing environment.
  • Sitting and standing is as needed.
