Upscale Japanese omakase concept is looking to add a Head Sushi Chefto their team.

Qualifications:

  • 5+ years of experience in high-end sushi or omakase environments
  • Advanced knowledge of Omakase techniques (aging, curing, marinating, torching, etc.)
  • Proven experience working directly with guests at a sushi counter
  • Deep understanding of Japanese ingredients and seasonality
  • Strong fish butchery and knife maintenance skills
  • Food safety certification required

Responsibilities:

  • Design and execute a seasonal omakase tasting menu (10-20+ courses)
  • Source and inspect premium seafood, including imported and domestic varieties
  • Perform whole fish breakdown and precise sashimi/nigiri cuts
  • Prepare and season sushi rice with consistency and precision
  • Maintain strict temperature control and product integrity
  • Curate pacing of courses to create a seamless guest experience
  • Interact with guests at the sushi bar, explaining ingredients, techniques, and origins
  • Customize courses based on guest preferences and dietary restrictions
  • Uphold traditional Edomae techniques while incorporating modern creativity where appropriate
  • Maintain pristine cleanliness and organization of the sushi counter
  • Monitor seafood inventory, ordering, and waste control
