Sushi Artist- Part-Time

The Sundial Beach Resort & Spa, located on sunny Sanibel Island, is searching for a Part-Time Sushi Artist to join our team at Shima Japanese Steakhouse & Sushi Bar

Primary Responsibilities:

1. Create high quality sushi including cooking rice, rolling sushi, temperature recording, cutting and packaging for take-out and dine-in plate preparation
2. Ensure all operating standards including food safety and quality are strictly adhered to
3. Show gratitude and greet every guest with a big, genuine smile and eye contact
4. Provide a high level of attention to guest satisfaction and maintain positive relationships with internal and external customers
5. Create connections with each guest in a friendly, professional and caring manner
6. Actively display knowledge of all food and beverage menu items and current promotions
7. Maintain cleanliness and organization of sushi station understanding the workings of the parasite destruction requirements set forth by the state of Florida
8. Complete opening and closing duties efficiently and safely, using the correct procedures
9. Complete all assigned daily, weekly and monthly cleaning duties
10. Be a team player; have lots of fun and support other teammates
11. Ability to captivate guests by cooking “on stage”
12. Ability to verbally explain processes of history, preparation, and rolling techniques to guests during live action preparation.
13. Ensures all food is prepared fresh and is of the highest quality
14. Strictly adheres to all recipes, methods and instructions from executive chef.
15. Maintain USA/FLA/FDA/Parasite destruction notices and standards for outlet

Preferred Qualifications:

1. High School Diploma or Equivalent
2. Must have at least 2 years’ experience as a sushi chef with experience in all sushi preparations including sushi, sashimi and maki.
3. Must have superior knife skills, creating exciting visual presentations for their food that are neat and clean with an eye for artistic balance
4. Knowledge of all sushi related products and menu development
5. The desire to interact with guests in a professional and courteous manner in our open kitchens
6. A commitment to creating an environment that consistently meets or exceeds the expectations of our guests, staff and owners.
7. Associate must be able to work weekends
8. Associate must be able to work holidays
9. Possess basic math skills and have the ability to handle money and operate a point-of-sale system.
