We are looking for Meat Department Leaders (DL and ADL) who can lead the Meat department, and assistant the store management team to create the shopping experiences for our customers that evoke the anticipation and excitement of finding astonishing products. Meat masters are dynamic and inspirational leaders who play a vital role in this store. The responsibilities cover all aspects of daily operations in Meat department including profitability, expense control, buying, merchandising, labor, regulatory compliance, and special projects as assigned. Essential Duties and Responsibilities (Other duties may be assigned):
• Assist the Management team with all of the Meat Department responsibilities.
• Oversee all of the Meat Department responsibilities including, but not limited to, providing quality customer service, supervise the Meat department employees amongst Meat department employees, ordering products and manage orders, supervise and manage products, create and coordinate scheduling, and efficiently organize and complete paperwork.
• Under the direction of the management team, they are responsible for in-service training for all meat department employees, including training and documentation. Training might cover proper organic standard procedures as they relate to cutting, preparing, packing, displaying and storing meat products, etc.
• Assist the management team with maintaining the appropriate profit margins in accordance with the approved preset budget for the meat department. This entails but is not limited to: sales goals for the meat department, cost of goods, expenses, price changes and waste management.
• Help manage costs by controlling shrink and theft.
• Cut, trim, and prepare a variety of meats including beef, pork, and poultry to retail high quality specifications.
• Supervise and delegates tasks to meet department team members. Assist the store management team with Corrective Actions and meetings involving Meat employees, etc.
• Develop and ensures meat workshop’s equipment, temperature, sweep, and sanitation logs are updated and completed.
• Supervise and complete weekly inventory. Be responsible for the meat department receive and inspect deliveries.
• Collaborate with Merchandise department and store management team to create unique and seasonal offerings or promotions.
• Create work schedule for meat department and strictly follow company and legal requirements about rest and meal breaks.
• Foster and encourage a positive environment of outstanding teamwork, mutual respect, and exceptional morale.
• Help manage costs by controlling shrink and theft.
• Consistently check the display cases to ensure the products are clean, neat, organized, visible, plentiful, well-stocked, and properly rotated.
• Handle customer complaints in such a manner to assure customer satisfaction.
• Demonstrate advanced product knowledge; maintain awareness of new products and regularly incorporate new products into the overall product mix.
• Assist the management team and EHS team with safety meetings or trainings to ensure that all of the team members fall within accordance to Cal OSHA’s requirements.
• Support the management team to document all department meetings and obtains employee’s signatures.
• Follow the employee handbook at all times, especially on service standards and appearance.
• At all times, meets and exceeds Tokyo Central store standards in service, quality, and cleanliness.

WEEKEND AVAILABILITY NEEDED
• Be able to adapt to different store environments during the training period. You might be signed up to different stores within Tokyo Central stores and our Central Kitchen. • Be able to demonstrate small team management abilities. Team sizes can be from 0~ 10 employees. Management skills are required for the meat department lead and assistant department lead positions. The overall direction, coordination, and evaluation will be reviewed. Management activities include but are not limited to: Interviewing; Training Employees; Planning, Assigning, and Directing Work; Addressing Complaints and Resolving Problems with employees and customers.
• Minimum of 3 years’ experience as a butcher and manager in a high-end market or specialty butcher shop. Current Tokyo Central Meat department leader/assistant department lead are welcome to apply.
• Strong knowledge of meat preparation techniques and culinary applications. Ability to visually examine products for quality and freshness. Knowledge of different cuts of beef, pork, and poultry as well as cooking procedures.
• Ability to read and interpret English documents such as safety rules, operating and maintenance instructions, and procedure manuals. Ability to use English to write routine reports and correspondences. Ability to speak English effectively before groups such as our customers and/or employees. The ability to speak Japanese and/or Spanish is not required but can be a huge plus.
• Basic mathematical skills are required. This includes, but not limited to, the ability to calculate figures and amounts. Also, to add, subtract, divide, and multiply using whole numbers, common fractions, and decimals are necessary.
• General reasoning ability is required. This position needs the leader to be able to interpret a variety of instructions that can be in the form of written, oral, in diagram, or scheduled forms. They need to have the ability to resolve conflicts in such a manner as to create a win-win situation. And they need to have the ability to analyze a variety of situations and to think things through to create a solution and to implement that said solution.
• While performing the duties of this job, the employee will regularly need to work near moving mechanical parts. The employee will occasionally be exposed to extreme heat and/or cold, to electrical shock, and be at a risk of burn. The noise level in the work environment will usually be loud. Due to the duties, safety will need to be followed.
