Casa Madera is a high-energy, fine-dining concept from hospitality group Noble 33, located in both West Hollywood and Toronto.
The Chef de Cuisine is responsible for leading the kitchen team in delivering exceptional culinary experiences while managing operations, and maintaining high standards of quality and hygiene. The Chef de Cuisine will be directly reporting into the Executive Chef for all instructions on the station such as, but not limited to, menu changes.
Duties and Functions:
- Prep or Line Cook experience in a high volume, fine dining setting
- Strong knowledge of basic cooking, plating, and knife skills
- Availability to work various shifts including nights, weekends, and holidays
- Recruit, train, and mentor kitchen including sous chefs, line cooks, and other team members.
- Create staff schedules to ensure coverage during service.
- Foster a positive work environment and maintain morale within the team.
- Conduct regular performance evaluations and provide constructive feedback.
- Oversee food preparation, cooking, and plating to meet standards.
- Monitor inventory levels and order supplies as needed to avoid shortages.
- Manage kitchen equipment, ensuring proper use and maintenance.
- Maintain a clean and organized kitchen environment.
- Control food costs through effective inventory management and portion control.
- Develop and manage the kitchen budget.
- Monitor and minimize waste to improve profitability.
- Participate in pricing strategies for menu items.
- Ensure compliance with food safety, sanitation, and hygiene regulations.
- Enforce kitchen policies and procedures.
- Conduct regular inspections and address any safety concerns.
- Ability to stand for the duration of shifts and lift/push/pull up to 50 lbs
Qualifications and Skills:
• Proven experience as a Chef de Cuisine or in a senior kitchen role.
• Culinary degree or equivalent professional experience.
• Exceptional knowledge of various cooking techniques, cuisines, and kitchen equipment.
• Strong leadership, organizational, and communication skills.
• Ability to work in a fast-paced environment and handle pressure.
• Budget management and financial acumen.
Work Environment:
• High-pressure, fast-paced kitchen setting.
• Standing for long periods and working in hot or confined spaces.
