Takibi is going through a refresh and relaunch following our unfortunate closure due to a chimney fire earlier this year. In addition to repairing and upgrading our fire prevention system, we’ve used this time to review the restaurant from the ground up. We have updated our concept from “mountain izakaya” to “contemporary Japanese inspired by cooking with and gathering by the fire,” showcasing Takibi’s and Snow Peak’s Japanese roots while re-establishing our connection to the outdoors & fire-based cooking. In support of this reimagined concept and menu, we have onboarded partners ranging from an acclaimed master chef (recently included on a ‘Top 150 in the World’ publication) to a renowned restaurant producer (100+ restaurants in Japan) to a Michelin starred ramen partner. Our goal is to deliver an expanded menu of unique offerings – from Japanese staples to ramen – while inspiring memorable, connective experiences for our guests centered around fire and Snow Peak’s outdoor values.

The successful Takibi Chef de Cuisine manages the daily operations of the kitchen, including menu development with the approval of the General Manager, inventory and purchasing of supplies, and cost control. This position oversees the activities of the kitchen staff and monitors food production and presentation in the absence of the General Manager and ensuring that regulatory guidelines of the food services industry are being followed by all employees.

This position is a full-time salaried, exempt position reporting to the Takibi General Manager. The compensation for this position ranges from $65,000-$80,000 per year, depending on experience. This position is based in Portland, Oregon, and requires availability on evenings, weekends, and holidays. The schedule for the position will be 5 days per week and scheduled days will vary.

WHAT YOU WILL DO

Manage Back of House Operations

  • Order all products based on par systems and inventory management
  • Oversee all ordering, inventory, and cost analysis to ensure a preset percent food cost
  • Oversee quality control of all food production and execution
  • Ensure all health department standards are upheld by enforcing high sanitation standards
  • Work all the line stations when needed
  • Address all kitchen-related problems and incidents in a timely and effective manner
  • Lead the planning and coordination of special events

Lead Back of House Team

  • Instruct Line Cooks in the preparation, cooking, garnishing, or presentation of food
  • Lead a robust training program for back of house on policies, procedures; recognize and suggest additional trainings to include cross-training among the team to ensure proper coverage
  • Demonstrate desired behaviors for staff
  • Create and manage shift schedules; verify hours worked for payroll; ensure cuts are being made whenever possible and fill in for hourly employees when necessary to minimize labor costs; approve/deny Line Cook and Porter time off requests based on scheduling
  • Leverage individual staff strengths, encouraging employee development and motivation
  • Supervise staff for productivity and adherence to restaurant regulations; ensure that healthy, safety, and security rules are followed; notice and promptly correct any negative behavior; escalate discipline to General Manager or Human Resources

Support General Manager, Snow Peak Leadership & Company Objectives

  • Serve as Manager of the Day when General Manager is not present
  • Complete reporting, purchase order, and weekly fill in duties as needed
  • Lead recruiting efforts of kitchen staff to include Line Cooks and Porters, with final approval from the General Manager
  • Submit onboarding information to Human Resources in a timely manner and ensure that staff complete their new hire paperwork prior to their start date
  • Build, adapt, and maintain tools and reports
  • Suggest and implement strategies for process improvements
  • Develop and maintain documentation and standards
  • Support change management processes
  • Provide support and advice on cross-functional projects
  • Participate in team meetings; provide knowledge, support, and advice for interdepartmental process improvements, projects, or policy revisions

Performs other related duties and projects as assigned

MUST HAVE

Education/Experience

  • High school diploma or equivalent experience
  • 7 years working back of house as a cook or chef in a restaurant environment, with at least 6 months of experience working in a sushi or Asian restaurant
  • At least 3 years of experience leading a team of five or more full-time employees in a food service establishment; enforcing and maintaining company policies and procedures; creating and maintaining employee scheduling
  • 2 years of experience leading a back of house team in a high-volume and full-service kitchen

Skills

  • Proficient understanding of the financial and business acumen to drive profitability
  • Intermediate understanding of Microsoft Office Suite (Excel and Word); ability to learn new computer programs and software
  • Intermediate mathematics and reporting
  • Excellent verbal and written communication skills
  • Have a mindset of professionalism, positivity, and accountability
  • Ability to execute operational excellence in food quality, service, and guest experience
  • In partnership with the General Manager, drive, lead, and oversee all kitchen operations to impact the profitability

Physical Requirements

  • Lift and move 50 pounds regularly
  • Stand and walk for an 8-10 hour shift, including moving safely through all areas of the restaurant, which may include stairs, uneven and slick surfaces
  • Ability to bear exposure to hot and cold environments

NICE TO HAVE

  • Professional working fluency in Japanese
  • Certification from a culinary school
  • Experience as a Sous Chef preferred
  • Experience with Japanese language and culture
  • Experience in the outdoor, retail, or apparel industries
