Opening this Fall, Mottai Miami is a modern Japanese restaurant in the heart of Coral Gables.

We are seeking an experienced and innovative Executive Chef to lead the culinary program of our upscale restaurant. This is a senior leadership role responsible for driving culinary excellence, managing a high-performing kitchen team, and ensuring every detail of execution reflects the quality of our brand and the essence of contemporary Japanese cuisine.

Who We’re Looking For

  • Minimum 3-5 years of experience as an Executive Chef or Chef de Cuisine in an upscale environment
  • Deep understanding of Japanese cuisine, with mastery of technique and ingredient sourcing
  • Proven ability to manage high-volume operations while maintaining fine dining standards
  • Strong leadership, mentorship, and team-building skills
  • Skilled in menu development, cost control, and kitchen systems implementation
  • Calm, composed, and solutions-focused under pressure
  • Experience leading sushi and hot kitchen operations
  • Experience collaborating with sushi chefs to design an omakase service is a strong plus
  • Experience with new restaurant openings is a plus
  • Culinary degree or formal training in Japanese and other Asian cuisines is preferred
  • Working knowledge of Spanish or another language is a plus

What You’ll Be Responsible For

  • Overseeing all culinary operations, including menu development, prep, service execution, and plating
  • Leading and mentoring a diverse BOH team, including Sous Chefs, sushi staff, and line cooks
  • Collaborating with executive team to uphold and evolve the restaurant’s culinary identity
  • Managing kitchen schedules, labor cost, inventory, and vendor relationships
  • Maintaining the highest standards of food quality, safety, cleanliness, and consistency
  • Working cross-functionally with FOH leadership to ensure a seamless guest experience
