Role Overview: As a Jr. Line Cook at Chotto Matte San Francisco, you’re the backbone of our culinary team, ensuring every dish meets our exacting standards. Key Responsibilities:

  • Execute culinary creations with precision and consistency, adhering to recipes and presentation standards.
  • Collaborate closely with fellow cooks and chefs to ensure smooth kitchen operations.
  • Maintain cleanliness and organization in the kitchen, adhering to food safety and sanitation guidelines.
  • Assist in inventory management and ordering to ensure freshness and availability of ingredients.
  • Embrace a culture of continuous improvement, actively seeking opportunities to enhance culinary skills and techniques.
  • Adapt quickly to changing demands and prioritize tasks effectively during busy service periods.
  • Follow kitchen procedures and safety protocols diligently to ensure a safe working environment.
  • Participate in training sessions and team meetings to foster professional growth and camaraderie.

Physical Demands:

  • Ability to stand and walk for prolonged periods (up to 8-10 hours per shift) on hard surfaces in a fast-paced kitchen environment.
  • Frequent bending, stooping, kneeling, reaching, and crouching to access low shelves, ovens, and storage areas.
  • Repetitive hand, wrist, and arm movements required for chopping, slicing, stirring, and using kitchen tools and equipment.
  • Regular lifting, carrying, and moving of food items, stock, and kitchen equipment weighing up to 50 pounds; occasional assistance may be required for heavier items.
  • Exposure to hot surfaces, open flames, steam, and sharp utensils, with mandatory use of PPE (e.g., gloves, slip-resistant shoes, protective aprons) as required by Cal/OSHA.
  • Must be able to safely operate and clean commercial kitchen equipment such as fryers, ovens, grills, mixers, and slicers in accordance with safety protocols.
  • Tolerance for temperature fluctuations and working in hot, humid, or refrigerated environments for extended periods.
  • Visual acuity and manual dexterity sufficient to perform precise kitchen tasks and identify food safety hazards (e.g., spoilage, cross-contamination risks).

Preferred Qualifications:

  • Minimum of 5 years of experience in a professional kitchen, ideally with exposure to Nikkei, Peruvian, or Japanese cuisine; formal culinary training is a plus.
  • Strong understanding of traditional and modern cooking techniques.
  • In-depth knowledge of food safety standards, cross-cultural ingredients, and kitchen operations in a high-volume environment.
  • Clear and professional communication skills with the ability to thrive in a collaborative, fast-paced team setting.
  • Passion for precision, presentation, and authenticity in delivering bold, high-quality dishes that reflect the fusion of Peruvian and Japanese culinary traditions.
  • Flexible availability, including evenings, weekends, holidays, and special events.
  • Solid understanding of food safety, and kitchen operations.
