This position is designed for a skilled culinary professional with a strong background in sushi preparation and line-level execution. Success in this role requires clear communication, attention to detail, and at least two years of experience working in a sushi bar, Japanese restaurant, or fine-dining environment. Candidates should be comfortable with both traditional techniques and contemporary approaches to sushi and sashimi.
A formal Culinary Arts degree is preferred, and prior experience in a hotel, resort, or high-volume upscale setting is highly valued. The ideal candidate demonstrates excellent knife skills, deep knowledge of seafood handling and storage, and a commitment to maintaining the highest standards of quality, cleanliness, and food safety.
In addition to daily production responsibilities-such as fish butchery, rice preparation, maki and nigiri execution, and station organization-this individual must be capable of providing direction and support to the team in the supervisor’s absence. Leadership potential, a calm presence under pressure, and the ability to uphold consistency during peak service are essential.
