The World Equestrian Center – Ocala is seeking a highly skilled and poised Lead Sushi Cook to lead the sushi program at White Willow; our refined Asian dining concept located within the prestigious Equestrian Manor. This role is ideal for a culinary professional with mastery in sushi preparation, a deep respect for tradition and technique, and a passion for delivering artistry on the plate.

As the Lead Sushi Cook, you will oversee all aspects of sushi production, ensuring precision, consistency, and elegance in every dish. Your leadership will reflect the World Equestrian Center’s core values of Quality, Class, and Distinction.

Primary Responsibilities:

  • Lead the sushi team in preparation, presentation, and execution of all sushi offerings.
  • Uphold traditional and contemporary sushi techniques with precision and care.
  • Ensure consistency in quality, portioning, and visual presentation.
  • Train and mentor sushi cooks, fostering a culture of excellence and continuous improvement.
  • Collaborate with culinary leadership to develop seasonal sushi menus and specials.
  • Monitor inventory and ordering of sushi-grade fish, rice, and specialty ingredients.
  • Maintain strict adherence to food safety and sanitation standards.
  • Support private dining and special events with bespoke sushi offerings.
  • Engage with guests when appropriate, sharing knowledge and enhancing the dining experience.
  • Maintain a clean, organized, and efficient sushi station.
  • Contribute to a respectful and collaborative kitchen environment.

  • Ability to stand for extended periods and perform repetitive tasks with precision.

Qualifications, Education, Experience, Skills and Abilities

  • Minimum of 5 years’ experience in sushi preparation, with at least 2 years in a supervisory role.
  • Mastery of sushi techniques, knife skills, and ingredient handling.
  • Deep understanding of Japanese culinary traditions and modern interpretations.
  • Strong leadership and communication skills.
  • ServSafe Certification required.
  • Professional appearance and demeanor.
  • Availability to work evenings, weekends, holidays, and special events.
