At MM by Morimoto, we’re reimagining the American steakhouse through the eyes of Chef Masaharu Morimoto – blending timeless chophouse sensibilities with bold, refined Japanese technique. As we build our dedicated team in Montclair, NJ, we’re seeking a Head Steward (Receiving Agent) who takes pride in precision, organization, and care.

This is more than a back-of-house support role – it’s a vital position that ensures the flow, quality, and integrity of our culinary operations.

Responsibilities

  • Oversee receiving of all daily deliveries: meats, seafood (including high-grade sushi fish), produce, dry goods, and specialty Japanese ingredients
  • Verify quality, quantity, and accuracy of products against invoices and specifications
  • Maintain organization of walk-ins, dry storage, and sanitation supplies with strict cleanliness and food safety standards
  • Collaborate with the culinary team to ensure proper storage and rotation of ingredients (FIFO)
  • Serve as the point of contact for vendors and delivery drivers – ensuring professionalism and smooth hand-offs
  • Manage waste logs, delivery discrepancies, and storage documentation
  • Support dishwashing and utility teams during service to maintain kitchen efficiency
  • Uphold DOH, HACCP, and company safety standards consistently

Qualifications

  • Experience in stewarding, receiving, or kitchen support – ideally in high-volume or fine dining
  • Strong communication skills and a proactive attitude
  • Familiarity with seafood and meat quality standards, especially sushi-grade fish, a plus
  • Ability to lift up to 50 lbs, navigate stairs, and stand for extended periods
  • Bilingual (English/Japanese or Spanish) helpful but not required
  • Deep respect for cleanliness, organization, and behind-the-scenes excellence
