Summary:

As the Director of Procurement, you will oversee and manage all activities pertaining to the purchasing of goods for culinary, food and beverage, and general restaurant operations. This position reports to the CFO.

RESPONSIBILITIES:

  • Assist in monitoring and negotiating pricing with vendors in compliance with company standards to maximize cost efficiency.
  • Assist in managing the development and maintenance of weekly order guides and par sheets
  • Manage receipt, compiling and distribution of weekly price bids from vendors.
  • Ensure only approved vendors and products are ordered by the operations.
  • Assist with the development and maintenance of vendor relations.
  • Assist with vendor negotiations which includes strategy, communication and achieving positive results.
  • Conduct audits and work closely with the accounting team to maintain compliancy of procurement and inventories as per company standards.
  • Provide weekly purchasing reports to identify items with price variances or availability issues for immediate attention.
  • Work closely with restaurants’ management in understanding the cause and effects of pricing increases to the company’s costs.
  • Provide support to the culinary team for sourcing products for R&D and operations.
  • Monitors product request trackers activity to ensure that all requests are handled and processed in a timely manner.
  • Assist the F&B Coordinator in recipe creation and accuracy of costing.
  • Work and assist F&B Coordinator on accuracy of costing of inventories through company’s RMS (Restaurant Management System).
  • Works with each restaurant to ensure adequate pars and inventory of supplies are available to meet the company’s needs.
  • Assists with development, updating, and enforcing procurement department policies and procedures.
  • Assists receiving personnel in ensuring procedures and workflows are running properly and report any deficiencies.
  • Coordinates procurement procedures with all departments and reports back to supervisor any deficiencies.
  • Prepare and manage detailed reports regarding all aspects of the procurement process as required.
  • Performs all other related and compatible duties as assigned.

REQUIREMENTS/QUALIFICATIONS:

  • Bachelor’s degree or equivalent combination of education and experience required.
  • 8+ years of purchasing management experience in a luxury hospitality environment required.
  • Five or more years of food & beverage buying experience.
  • Two or more years of Cost Control experience.
  • Two or more years of logistics experience.
  • Must be skilled in dealing with financial and numeric data.
  • Must be skilled in the use of Excel and other Microsoft Office applications.
  • Experience in working with procurement and inventory management systems.
  • Strong time-management skills and the ability to organize and coordinate multiple projects at once.
  • Good communication skills, both verbal and written.
  • Maintain the confidentiality of company information
  • Ability to work a flexible schedule inclusive of weekends, am, and pm.
  • Must be able to travel among RDG properties.

Physical Demands And Work Environment:

  • General office assignments-(typing), which lends itself to repetitive motion.
  • Be able to reach, bend, stoop, and frequently lift to 50 pounds.
  • Ability to be in warm (hot) weather conditions throughout shift (Pool and boat deck)
