Summary:
The Receiver is responsible for overseeing all incoming deliveries, ensuring all food, beverage, and OS&E (Operating Supplies & Equipment) products meet the restaurant’s strict quality and safety standards. This role is critical in upholding product integrity, maintaining organized and sanitary storage, and supporting compliance with HACCP and local health regulations.
RESPONSIBILITIES:
Product Inspection
- Inspect all incoming deliveries for quality, ripeness, freshness, and specification compliance, including produce, seafood, meats, dry goods, and OS&E items.
- Confirm consistency in size, weight, and standards per vendor agreements and internal specifications.
Receiving Protocols
- Conduct thorough checks of delivery trucks to verify cleanliness and proper transport conditions.
- Measure and document temperatures of all perishable goods upon arrival in line with HACCP requirements.
- Match received items against purchase orders and report any discrepancies or damages immediately.
OS&E Receiving
- Understand and process palletized purchase orders, including breaking down pallets for individual items.
- Follow location-specific disposal procedures for packaging materials and shipping waste.
- Ensure OS&E products are stored in appropriate areas, clearly labeled, and easily accessible.
Storage & Organization
- Efficiently rotate and organize stock in walk-ins, freezers, and dry storage following FIFO (First In, First Out) standards.
- Maintain cleanliness and order across all storage zones, complying with DOH and food safety regulations.
Documentation & Compliance
- Complete all receiving documentation, including daily logs, temperature tracking, and incident reports.
- Assist with regular inventory counts and participate in supplier audits and internal quality reviews.
- Uphold all standards outlined in HACCP protocols, health department guidelines, and internal SOPs.
Requirements/Qualifications:
- Minimum 2 years of experience in a receiving or inventory-related role in a high-volume or fine dining environment.
- Strong understanding of food and equipment receiving standards, handling, and storage procedures.
- Familiarity with HACCP protocols and temperature control processes.
- Comfortable lifting up to 50 lbs and working in refrigerated conditions.
- Excellent attention to detail, punctuality, and organizational skills.
Other Skills and Knowledge:
- Entry level knowledge or Microsoft Office Applications (Outlook, Word and Excel)
Physical Demands And Work Environment:
- Ability to stand for long periods of time.
- Ability to lift items between 40-50lbs.
- Ability to work in a fast pace and refrigerated environment.
RESPONSIBILITIES:
- Ensure par levels for food, beverage and disposable items based on established par levels and communicate with managers accordingly for ordering purposes.
- Assist with daily and weekly inventories and report issues to buyers.
- Comply with sanitary practices for food handling, general cleanliness, and maintenance of receiving and storage areas.
- Ensure and maintain restaurant compliance with all health and safety regulations.
- Perform daily facility walk throughs of storage & receiving areas.
- Comply with restaurant policies and procedures.
- Receives all supplies, verifies invoices and ensures quality as per RDG guidelines.
- Contact suppliers with order issues and communicate them to MOD.
- Store supplies in assigned areas, perform proper rotation and report items reaching expiration dates.
- Prepare daily receiving reports (LTS) and transmit invoices to the corporate office.
- Process invoices in PMS
- Perform other duties as needed.
REQUIREMENTS/QUALIFICATION:
- At least 1 year experience working in storerooms or warehouse environment.
- At least 1 year experience of handling food products

- Entry level knowledge or Microsoft Office Applications (Outlook, Word and Excel)
