Mission

To manage and maintain the direction of the overall venue wine program. Sommelier must be personable and able to communicate with guests with various levels of wine knowledge, & view finding the perfect wine as a challenge factoring in budget, flavor profiles and guest preference to make recommendations that provide a next level experience. As well as major focuses on staff and manager training, wine organization, upkeep and wine steps of service and standards. This position must focus on growing wine sales and maintaining COGS while increasing staff knowledge and guest experience through wine.

• Ensure steps of service are being met and executed by all staff & Management
• Communicate menu changes, updates, and specials to all staff as well as management
• Correspond about all 86/OOS items weekly and daily
• Manage wine purchasing and monitors wine inventory, maintains cellar pars
• Assists Service team with aiding guests in wine selection and pairings
• Directs regular and consistent training on wine and beverage pairings for servers, managers and chefs
• Partners with Back of House to identify wine-friendly ingredients
• Create a memorable “experience” for all guests by ensuring exceptional service, showmanship and professionalism
• Ensures accountability for all product at each outlet

Day to Day Beverage Management
• Works with General Manager and Beverage Director to consistently meet revenue and profitability goals for beverage programs
• Negotiating pricing with vendors
• Complying with health and safety regulations
• Share knowledge of and appreciation for wine with all guests, answering questions and offering recommendations
• Provide excellent and responsible beverage service to all guests
• Acute knowledge of wine pairings assisting guests and staff in identifying for best experience
• Update POS system to be in line with menu pricing
• Returns corked and spoiled wines to suppliers for refunds
• Demonstrate extensive knowledge in wine selection and ensures the wine list is in keeping with the menu and recent trends
• Responsibility of liquor room; all items going in and out, protection, as well as organization working with beverage manager for

all items wine related
• Assisting staff in constant growth and learning by Noble33 standards
• Overall responsibility and awareness of beverage cost, comp, voids, spills on a nightly basis in regards to wine
• Review Pmix regularly as a tool to review which wines are selling and which wines need to be pushed
• Correspond any 86’d items to management
• Cleanliness and organization all wine areas
• Bar prep consistency
• Make sure that opening and closing duties are being completed
• Schedules for Bartenders and Barbacks

Ensure brand standards are maintained
• Curating and updating wine lists in conjunction with Beverage Director
• Organizing wine tasting events
• Ensure correct product is being used as specified by Beverage Director and on wine menu
• Relay any changes on menu to management and staff
• Proper back bar and well placement of wine
• Help push staff incentive programs

Manage Inventory and Labor
• Overall responsibility and awareness of beverage cost
• Costing out cocktails and any other beverage items
• Perform monthly inventory
• Inventory organization
• Ordering and receiving process
• Ensure safekeeping of invoices
• Effectively following budget guidelines
• Staff scheduling
• Awareness of breaks and overtime
• Performs other duties as required or assigned by General Manager

Reimbursements and Expenses
Employees are eligible for work related reimbursements and expenses to be turned in monthly and assigned and approved by store GM.
