Villa Roma Resort & Conference Center is seeking a talented and ambitious culinary professional to lead our newest dining concept, Alturra, a Japanese-Peruvian fusion restaurant located at our ski chalet. Position Responsibilities

The Sous Chef / Lead Chef will oversee all aspects of Alturra’s kitchen operations, including menu development and execution, with particular emphasis on authentic Japanese techniques integrated with Peruvian flavors and ingredients. This includes responsibility for food quality, consistency, and presentation across all service periods.

You will recruit, train, and supervise kitchen personnel, establishing standards for performance and professional conduct. Inventory management, vendor relationships, and food cost control fall within your purview, as does ensuring strict compliance with all health and safety regulations.

Collaboration with resort management on special events, seasonal offerings, and promotional menus will be expected. The position requires flexibility to adapt to the seasonal rhythms of a resort property, including heightened activity during ski season and holiday periods.

Candidate Qualifications

The ideal candidate possesses three to four years of professional culinary experience, with demonstrated proficiency in Japanese cuisine. This may include formal training in Japanese culinary techniques, substantial experience in a Japanese or Japanese-influenced kitchen, or a combination of both. Familiarity with Peruvian ingredients and preparations is advantageous but not required; a willingness to learn and genuine enthusiasm for the cuisine is essential.

Candidates should demonstrate strong organizational abilities, clear communication skills, and the temperament to lead a kitchen team through demanding service periods. A culinary degree or equivalent professional training is preferred. ServSafe certification or equivalent food safety credentials are required.

Compensation and Benefits

This full-time, exempt position offers a competitive annual salary ranging from $70,000 to $80,000, commensurate with experience and qualifications. Eligible employees may participate in the resort’s health insurance program following the applicable waiting period, and may enroll in the company’s 401(k) retirement plan.

Staff housing may be available for the successful candidate. The resort maintains on-site accommodations for eligible employees at a nominal weekly rate, which can significantly reduce living expenses and provide convenient proximity to work.
