SUMMARY: The Sushi Cook is primarily responsible for preparing, cooking, and presenting food according to THE LOT’s standard recipes. This role requires creating quality food products while maintaining proper food storage and sanitation standards.
ESSENTIAL JOB FUNCTIONS:
- Prepare and create a variety of sushi, rolls, and other Japanese dishes based on recipes.
- Prepare cooking ingredients by washing and chopping vegetables and filleting and preparing fish.
- Prepare and portion necessary sushi sauces, ensuring they meet quality standards and are ready for use in service.
- Ensure the use of high-quality and fresh ingredients in all dishes.
- Demonstrate attention to detail and creativity in the presentation of all dishes.
- Adapt to daily specials and menu changes and learn to prepare new items as required.
- Coordinate food orders to ensure timely and efficient delivery to guests.
- Collaborate with the kitchen team to ensure smooth operation.
- Operate standard kitchen equipment safely and efficiently.
- Restock items as needed throughout the shift.
- Ensure cleanliness, hygiene, and sanitation standards by maintaining workstations and adhering to all sanitation and food production codes.
- Follow uniform standards and procedures.
- Work as a team, assisting with all guest and team member needs.
Associate is held accountable for all duties of this job and other duties as assigned.
JOB REQUIREMENTS:
- Proven experience as a Sushi Cook or in a similar role, with a minimum of 2 years in a high-volume restaurant or sushi bar setting.
- Knowledge of various sushi styles, types, and preparation techniques.
- Excellent knife skills and the ability to confidently fillet all types of fish.
- Comprehensive understanding of kitchen preparation methods, ingredients, and professional cooking techniques.
- A valid California Food Handler’s Certification.
- Knowledge of food health and safety regulations.
- Flexibility to work various shifts, including evenings, weekends, and holidays.
- Demonstrated dependability and reliability with respect to timeliness, attendance, follow-through, and ability to work independently and efficiently.
- Willingness to learn preferred skills as needed.
