New Waterloo, in partnership with Infinite Hospitality, is bringing Underground Izakaya by Yoshi Okai of Otoko to Aspen, CO. Opening Summer 2025, this intimate, high-energy space will offer a bold take on Japanese dining, combining tradition with creative execution.
JOB OVERVIEW
A Sushi Cook is responsible for preparing sushi, sashimi, nigiri, etc. while maintaining high standards of food safety, presentation, and consistency. The ideal candidate is passionate about Japanese cuisine, has exceptional knife skills, and thrives in a fast-paced, high-quality kitchen. You’ll be responsible for crafting sushi dishes with precision, ensuring food safety, and maintaining the highest level of quality.
What you’ll do:
- Prepare and present high-quality sushi, sashimi, rolls, nigiri, etc.
- Source, inspect, and handle fresh fish and seafood properly
- Maintain proper knife techniques and traditional Japanese culinary methods
- Ensure consistency in portion sizes, presentation, and flavor profiles
- Maintain a clean, organized, and sanitary work environment
- Monitor inventory, manage food waste, and assist with ordering supplies
- Work collaboratively with the kitchen team and front-of-house staff
- Uphold food safety, health, and sanitation standards
- Innovate and contribute to seasonal menu changes and new sushi offerings
Who you are:
- You have previous experience as a Sushi Cook or in a similar role.
- You have extensive knowledge of sushi preparation, fish handling, and knife techniques.
- You must be able to speak, read, write, and understand the primary language(s) of the workplace.
- You are able to read and interpret documents such as safety rules, operating and maintenance instructions, and procedure manuals.
- You are able to speak effectively before guests and groups of co-workers.
