POSITION OVERVIEW

We are seeking a skilled and detail-oriented Sushi Cook to prepare high-quality sushi in a fast-paced luxury dining environment. This role is responsible for preparing traditional Japanese sushi rice, chopping, slicing, filleting fish, and customizing orders according to guest preferences and dietary restrictions. Sushi Cooks play a key role in maintaining exceptional food quality, consistency, and presentation, even during high-volume service periods.

YOUR ROLE

Prepare all types of sushi including maki, nigiri, and sashimi with precision and care
Maintain full knowledge of sushi preparation techniques, service standards, and departmental policies
Use kitchen equipment properly, safely, and in accordance with brand standards
Anticipate guest needs and respond promptly while maintaining courteous service, regardless of volume or time of day
Work collaboratively with co-workers to maintain a cohesive, team-oriented environment
Maintain cleanliness, organization, and compliance with state sanitation, health regulations, and company standards
Follow prep work instructions from the Manager or Supervisor and perform tasks with speed, accuracy, and attention to detail
Prioritize, organize, and execute job functions under variable working conditions
Demonstrate clear thinking, problem-solving, and good judgment under pressure
Maintain confidentiality of company information, recipes, and operational standards

REQUIREMENTS

Minimum 3 years of experience as a Sushi Cook or in a high-volume Asian restaurant
Strong knowledge of various sushi types and rolling techniques
Ability to compute basic arithmetic and follow recipes accurately
Effective written and verbal communication skills
Availability to work nights, weekends, and some holidays
Ability to maintain composure and quality standards during peak service periods
Team player with a professional attitude and strong work ethic

LICENSE/QUALIFICATIONS

Food Handlers Permit required
Must be able to work nights, weekends, and some holidays
Ability to read, speak, and understand basic cooking directions
Understanding and knowledge of safety, sanitation, and food handling procedures
