Description
We are seeking an experienced and passionate Sushi Head Chef to lead our sushi kitchen operations. The ideal candidate will have extensive knowledge of traditional and modern Japanese cuisine, particularly in sushi preparation, knife skills, and fish butchery. This role requires a high level of creativity, precision, and leadership to maintain the highest quality and presentation standards. The Sushi Head Chef will be responsible for menu development, inventory management, staff training, and ensuring strict adherence to food safety and hygiene regulations.
Requirements
- Experience & Skills: Minimum 5-7 years of professional sushi chef experience, with at least 2 years in a head chef or leadership role Expert knowledge of traditional and contemporary sushi techniques, including nigiri, sashimi, maki, and omakase Exceptional knife skills and deep understanding of seafood preparation and preservation Strong knowledge of Japanese ingredients, flavors, and seasonal pairings Experience managing kitchen operations, including ordering, inventory control, and staff scheduling Leadership & Management: Proven ability to train, mentor, and lead kitchen staff to ensure consistency and excellence Ability to create and innovate new menu items that align with brand vision and customer preferences Strong communication skills and a team-oriented mindset Ability to work under pressure in a fast-paced environment while maintaining quality Education & Certification: Culinary degree or relevant certification (preferred but not mandatory) Food Handler’s Certification and familiarity with HACCP or other food safety regulations Other Requirements: Willingness to work flexible hours, including evenings, weekends, and holidays Strong attention to detail and a commitment to cleanliness and organization Passion for Japanese cuisine and a desire to continuously learn and evolve
