Job Description
Our beautiful community, The Courtyard at Mt. Tabor in Portland, Oregon, is looking for a passionate Director of Food & Beverage to join our team of Senior Living Warriors! If you’re ready to make a difference and provide exceptional dining experiences, we’d love to have you on board
Job Summary: Ensure successful creation, production and service of high-quality food products to residents, families, and guests. Establish a friendly, courteous restaurant atmosphere. Maintain clean, safe and operational excellence in the front and back of house. Operate the department within established financial budgets. Supervise/oversee the training of all kitchen and dining room staff. Establish menus and menu cycles. Oversee daily food preparation as well all hospitality operations.
Essential Job Duties:
– Supervise all food service personnel at the community and prepare high quality meals consistent with local customs and tastes
– Maintain inventory control on quantity and condition of all kitchen equipment (ensure a monthly China, glass, silver inventory is conducted)
– Ensure the safe working condition of all food service equipment
– Purchase all food and non-food supplies from approved vendors
– Understand and monitor the monthly food service budget on a daily basis to achieve department budget targets
– Establish menus and menu cycles with recipes to support them in collaboration with Chef
– Continually check market for new ideas, cooking techniques and product
– Complete various reporting on a timely basis
– Monitor compliance with health regulations regarding food preparation, storage, and service
– Monitor food preparation methods, portion sizes, garnishing and presentation of food to ensure consistent quality standards are met
– Investigate and resolve resident comments and suggestions regarding food selection, quality and/or service
– Coordinate assignments of cooking personnel to ensure economical use of food and timely preparation
– Schedule and receive food and beverage deliveries, checking delivery contents to verify product quality and quantity
– Monitor budgets and payroll records, and review financial transactions to ensure that expenditures are authorized and budgeted
– Provide opportunities for associates to engage in their work, the community and the company
– Create an environment of associate recognition and appreciation
– Conduct departmental planning and forecasting, and fluidly manage operations based on occupancy and economic conditions
– Drive process and continuous improvement
– Model high standards of personal appearance and grooming, which includes wearing a name tag when working
– Interview, hire and retain highly effective associates
– Present and/or ensure required new hire training, ongoing skills training, and recordkeeping takes place for all associates
– General instruction and/or functional guidance is provided on some, but not all tasks to be performed, and the results of individual projects may be reviewed upon completion
– Expected to respond to questions from residents and their family members, troubleshooting and resolving issues utilizing their own discretion and judgment.
Supervisory Responsibility:
– Responsible for the direct supervision of team members in the following roles: Kitchen Manager, Dining Room Supervisor, Cooks, Utility Workers, and Servers.
– Using independent judgment which includes having the authority, in the interest of MBK, to hire, transfer, suspend, promote, discharge, assign, reward, or counsel team members.
– As a member of the community management team and a manager on duty (MOD), temporary direct and indirect supervisory responsibilities will exist.
Knowledge and Skills:
– College degree or some college preferred.
– Culinary or Hospitality certification or a minimum of five years professional hospitality experience in quantity food production.
– Able to read, speak, write, and follow verbal and written instructions in English.
– Must possess strong communication skills.
Special Requirements/Certifications:
– Must possess Food Handler’s Certificate where required and acquire ServSafe certification.
Physical Demands:
– Must be mobile and able to perform the physical requirements of the job, bending, kneeling, stooping, pushing, pulling and repetitive motion
– Ability to sit and work at a computer for long periods of time
– Able to move intermittently throughout the work day and the community
– Ability to lift/carry up to 30 lbs. and push up to 20lbs. as necessary
Salary: $90,000-$105,000 (DOE)
