An established upscale Japanese restaurant is seeking an Executive Chef to lead their main hot kitchen.

Qualifications:

  • 5+ years in a culinary leadership role, specifically in upscale Japanese or Asian fusion (hot food)
  • Strong operational background, including scheduling, ordering, and team development
  • Must be able to filet a salmon and demonstrate advanced fish butchery skills
  • Portfolio of culinary work required for consideration

Key Responsibilities:

  • Lead all aspects of the hot kitchen (25% of total volume)
  • Supervise a team of 7-10 cooks and hire a sous chef of choice
  • Manage BOH systems, food cost, inventory, and training
  • Collaborate with ownership on menu development and execution
  • Maintain high standards for food quality, safety, and presentation
  • Foster a positive, accountable, high-performing kitchen environment
