About the Role
Ember Management Group is hiring PM Sushi Cooks to join the opening culinary team for Buccan, Imoto, and The Sandwich Shop in Coral Gables. This is a hands-on line position for cooks who thrive in a fast-paced, quality-driven, scratch kitchen environment.
Line Cooks are responsible for executing menu items during service according to established recipes and standards, maintaining clean and organized stations, and supporting the culinary team with consistency, urgency, and attention to detail.
Responsibilities
• Prepare sushi, sashimi, nigiri, maki rolls, and composed Japanese cold dishes according to restaurant recipes and presentation standards
• Portion fish with precision while maintaining strict quality and freshness standards
• Prepare sauces, garnishes, condiments, and supporting components for service
• Maintain proper seafood storage, labeling, and rotation procedures
• Set up, stock, and maintain sushi station for service readiness
• Maintain clean, organized, and efficient workstation throughout service
• Operate and properly maintain sushi knives, rice cookers, slicers, and smallwares
• Follow all food safety, sanitation, and workplace safety standards
• Communicate clearly and effectively with chefs and teammates during service
• Maintain attention to detail in plating, portioning, and overall presentation
• Support prep, breakdown, and closing duties as assigned
PM Sushi Cook Focus
• Preparation of sauces, garnishes, and mise en place for service.
• Execute sushi and sashimi orders during dinner service with speed and precision.
• Maintain station organization and product readiness during high-volume service.
• Monitor seafood quality, freshness, and station pars throughout service.
• Prepare sushi, sashimi, nigiri, maki rolls, and composed Japanese cold dishes according to restaurant recipes and presentation standards.
• Execute plating with consistency and attention to detail.
• Complete station breakdown, sanitation, and proper seafood storage at end of service.
Requirements
Qualifications
• Prior sushi cooks or Japanese cuisine experience strongly preferred.
• Strong knife skills with experience handling raw seafood.
• Knowledge of seafood quality identification and proper handling procedures.
• Ability to work efficiently and calmly under pressure.
• Strong attention to detail and commitment to craftsmanship.
• Team-oriented, dependable, and organized.
• Ability to meet food safety and sanitation standards.
Physical Requirements
• Ability to lift up to 55 lbs.
• Ability to stand and work 8-10-hour shifts.
• Ability to bend, reach, and perform repetitive motions in a kitchen environment.
• Ability to work in refrigerated and cold food preparation environments.
